First things first...
Buying and Preparing the Romaine:
Buy the freshest greens with crisp leaves
Leaves must be free of brown spots
Use as soon as possible after buying
Keep only for 3, or 4 days, wrap unwashed leaves in damp paper towels, store in perforated plastic bag
If slightly wilted soak in ice water for 4, or 5 minutes
Proper washing, drying, and chilling is an important first step
Make sure that there is no sand, or dirt
Expose the entire surface of each leaf to cold running water
A salad spinner works best for drying, but don’t overcrowd it
To prepare lettuce sort through the leaves and discard any tough stems, or wilted pieces
Gently tear them by hand into pieces no bigger than 2”
