A smaller, traditional Caesar

This is another version of a traditional Caesar Salad that is similar to the one that I have made for years without using a recipe. It’s smaller than the Traditional Caesar, and has a slightly different flavour. A good choice to accompany a main course for four, or five people.

Ingredients:

1 head Romaine lettuce

4 slices bacon cooked until crisp 

1 cup unflavoured croutons

1 wooden salad bowl

Wash and prepare lettuce, then set aside.  Begin to saute bacon in frying pan until crisp. While the bacon is cooking start to prepare the dressing. Coddle egg for 1 minute, and then separate the yolk from the rest of the egg. Rub garlic into sides of wooden salad bowl. In bottom of bowl whisk together all ingredients except for bacon, croutons, and Romaine. Place lettuce in bowl on top of dressing, and toss. Top with bacon broken into 1 inch pieces, and croutons. Serve immediately.

Dressing:

1 egg yolk  

2 cloves garlic

1/3 cup of extra-virgin olive oil 

1/2 cup grated Parmesan cheese

3 anchovy fillets, minced 

2 teaspoons Dijon mustard 

1 teaspoon lemon juice

1 teaspoon red wine vinegar

1 teaspoon Worcestershire sauce 

1/4 teaspoon of salt

1/4 teaspoon freshly ground pepper
